Sushi Room

Sushi Room is a new, incomparable dining experience. Presenting authentic Japanese cuisine within a contemporary setting, the restaurant utilises the highest quality of produce and exceptional culinary techniques, led by head chef Shimpei Raikuni. Set within the now iconic Calile Hotel, Sushi Room echoes the Hotel’s broader architectural context through its unique interior concept designed by Richards & Spence, yet also defines a character all of its own; drawing aesthetic cues from a 1960s futuristic take on Japanese minimalism. Through a deft use of texture, colour, and intriguing volumes—such as its dramatic, brutalist domed ceiling—the restaurant generates a reverential, theatre-like mood that complements Chef Raikuni’s refined, world-leading cuisine.

Studio Bland’s design response reflects the materiality, colour palette and minimalism of Sushi Room’s distinctive interior spaces and broader philosophy of culinary innovation. Print collateral continues the attentiveness to beguiling and subtle details across the restaurant. This includes the use of silver foil — to allude to the restaurant’s future-focussed mindset — and hidden splashes of red (such as the underside of placemats) used sparingly create moments of curiosity. Further echoes of the interior are achieved through a custom domed emboss on Sushi Room’s red-backed business cards. The restaurant’s Omakase and Enkai menus draw inspiration in a playful yet respectful way to the tradition of origami, utilising folded details to invite diners’ interaction and generate curiosity. The resulting design instils a sense of mystery while actively introducing visitors to Sushi Room.
